  • Dried fruits: 450g currants, 225g sultanas, 225g raisins
  • Glacé cherries: 100g, halved
  • Mixed peel: 75g
  • Zest and juice of an orange and a lemon
  • Brandy: 3-4 tablespoons (plus extra for feeding the cake)
  • Butter: 250g, softened
  • Brown sugar: 200g
  • Eggs: 4 large
  • Plain flour: 225g
  • Mixed spice: 1 teaspoon
  • Ground cinnamon: 1 teaspoon
  • Ground nutmeg: ½ teaspoon
  • Almonds: 75g, chopped
  • Black treacle: 1 tablespoon

Preparation: The Key to a Great Christmas Cake

A well-prepared cake takes a bit of planning, so let’s get started.

  1. Soak the Fruits: Begin by soaking your fruits a day or two before baking. Combine currants, sultanas, raisins, cherries, and mixed peel in a large bowl. Add the zest and juice of the orange and lemon, along with 3-4 tablespoons of brandy. Mix well, cover, and leave to soak overnight. This helps the fruit plump up and absorb the festive flavour.
  2. Line the Cake Tin: Preheat your oven to 140°C (fan-assisted). Grease and line a deep 20cm round or an 18cm square cake tin with double layers of baking parchment. Wrap the outside of the tin with a double layer of brown paper, securing it with string – this helps protect the cake from burning during the long baking time.
  3. Cream the Butter and Sugar: In a mixing bowl, beat the softened butter and brown sugar until light and fluffy. This step is essential to give the cake a soft, velvety texture. Add the eggs, one at a time, beating well after each addition.
  4. Fold in the Flour and Spices: Sift the flour, mixed spice, cinnamon, and nutmeg into the bowl. Gently fold the dry ingredients into the butter mixture, being careful not to overmix.
  5. Add the Fruit and Treacle: Stir in the soaked fruits (along with any remaining juices), chopped almonds, and black treacle. Mix thoroughly until all ingredients are evenly combined.
  6. Pour into Tin and Bake: Pour the cake mixture into your prepared tin, smoothing the top with a spatula. Use a piece of baking parchment to cover the top (to prevent it from browning too quickly). Bake on the middle shelf for 4-4.5 hours, or until a skewer inserted into the centre comes out clean.

Feeding Your Christmas Cake

Once your cake is baked, leave it to cool completely in the tin. Once cool, remove it from the tin, but keep the parchment on to help keep it moist. Every week, “feed” the cake by pricking small holes on the top with a skewer and brushing a tablespoon of brandy over it. This ensures the cake remains rich and moist.
