As autumn sets in and the days grow shorter, there’s nothing better than filling your home with the warm, spicy aroma of freshly baked goods. While the crisp air may call for cozy sweaters and hot drinks, autumn baking adds that extra layer of comfort to the season. This year, why not treat yourself to something a little different? Ginger Spice Muffins paired with homemade ginger tea make for the perfect autumn indulgence.

Ginger Spice Muffins: A Warm, Fragrant Treat

Ginger spice is the perfect way to celebrate autumn, offering a delicate warmth with every bite. These muffins are moist, rich, and full of flavourful spices that will surely become a seasonal favourite in your kitchen.

  • 1 tsp ground ginger
  • 1/2 tsp ground cinnamon
  • 1/2 tsp ground nutmeg
  • 1/4 tsp ground cloves

  • 1/4 tsp salt
  • 1/2 cup unsalted butter (softened)
  • 3/4 cup brown sugar
  • 2 large eggs
  • 1/2 cup molasses
  • 1/2 cup buttermilk

Instructions:

  1. Preheat the oven to 180°C (350°F) and lightly grease a muffin tin.
  2. In a bowl, whisk together the dry ingredients: flour, ginger, cinnamon, nutmeg, cloves, baking powder, baking soda, and salt.
  3. In a separate bowl, cream together the butter and brown sugar until light and fluffy. Beat in the eggs one at a time, then stir in the molasses.
  4. Slowly add the dry ingredients to the wet mixture, alternating with the buttermilk, until combined.
  5. Fill the muffin tin with batter and bake for 18-20 minutes or until a toothpick comes out clean.
  6. Allow the muffins to cool slightly before serving.

These ginger spice muffins are not only delicious but also fill your home with the inviting scent of autumn. Perfect for breakfast, a snack, or even dessert!
